Do you like vegetable soup? It is a favorite soup for many, but frankly some vegetable soups leave me wanting just a little more because they are, well, too soupy. You know, they just aren’t hearty enough. Well, that isn’t so with this hearty vegetable soup recipe. Just check out the list of ingredients and basic instructions below and you can even add a can of kidney beans (or beans of your choice) to make it even more hearty.

Ingredients for Hearty Vegetable Soup Recipe:

1 tbsp olive oil
1 onion, chopped
2 cloves of garlic, chopped finely
2 stalks of celery, chopped
3 carrots, chopped
1 tbsp fresh thyme
sea salt and fresh ground pepper
2 x cans of chopped tomatoes (14oz)
1 1/2 litres of water or stock

1 cup of pasta (your choice)

Instructions:

In a large sauce pan over medium heat add the oil, onion, carrots, celery, garlic, thyme and salt and pepper and cook until just soft. Add the tomatoes and water and simmer for 15 minutes. Add the pasta and cook for another 8-10 min. Serves 4-6.

Cucumber, Tomato and Onion Salad From Paula Deen

It’s almost hard to believe, but I actually found something healthy on Paula Deen’s website. Here’s a very simple cucumber, tomato and onion salad that should take about 10 minutes to make.

Here’s a list of ingredients below:

Ingredients

1 pound cucumbers (about 2 cucumbers), peeled and thinly sliced
1 pint cherry tomatoes, halved
1/2 Vidalia onion, very thinly sliced
2 tablespoons chopped fresh parsley leaves
1 tablespoon apple cider vinegar
1 tablespoon olive oil
Salt and freshly ground black pepper

Directions

In a large serving bowl, toss together the cucumbers, cherry tomatoes, onion, parsley, vinegar, olive oil, salt, and pepper, to taste. Let the salad stand for 10 minutes before serving.

This is a very healthy and nutritious salad for anyone, especially for those trying to lose weight and I can hardly believe it is from Paula Deen who usually has the most fattening recipes anywhere online.

Here is a list and info graphic someone made of the 16 healthiest foods ever. I would agree with everything on the list except the yogurt, especially that kind of yogurt. Possibly a plain yogurt would be much better because most name brand yogurts are filled with all kinds of preservatives and flavor enhancers.

There must be a million ways to make chicken and here’s another great Spaghetti dish with sauteed chicken and grape tomatoes that looks delicious. And for those of you on a diet or looking to eat light, this chicken recipe only has 330 calories.

The list of ingredients are:

  • 2 skinless chicken breast halves, diced in 1 inch cubes
  • cooking spray
  • 1/2 tsp each of dried oregano and dries basil
  • kosher salt and fresh pepper
  • 8 oz spaghetti (high fiber or low carb) I used Ronzoni Smart Taste
  • 2 cups grape tomatoes, halved
  • 6 cloves garlic, smashed and coarsely chopped
  • 4 tsp extra virgin olive oil
  • 4 tbsp chopped fresh basil

This sauteed chicken recipe with spaghettti is easy to make and only takes less than 30 minutes or so, plus it is a healthy and light meal choice for you and your family. And who doesn’t just love chicken?
